Burrata is a soft cheese made from cow’s milk. Italian vegetable salad with burata cheese (4 servings)
You will need:
- 4 small short cucumbers or 1 long cucumber,
- 2 large tomatoes or 5 cherry tomatoes,
- 200 g of Burrata cheese,
- 50 g of marinated olives,
- 60 ml of olive oil,
- fresh greens (basil leaves, dill, etc.),
- half a lemon
- a little salt and pepper.
Cooking process: cleanly wash vegetables and greens, cut cucumber and tomato into small slices and put them on a large plate. Pour Burato cheese brine and olive marinade, tear the cheese and add half an olive to the salad.
Prepare a small bowl for salad – pour olive oil, squeeze lemon juice and add grated lemon peel, mix well. Dress the salad with dressing and season with spices, sprinkle with chopped fresh herbs. Tasty!
Grilled Nectarine and Burrata Cheese Salad (Serves 4)
You will need:
- 3 pcs. ripe nectarines,
- 2 balls of burrata cheese,
- 50 g of curry nuts,
- 15 g unsalted butter,
- 2 tablespoons of sugar
- olive oil,
- 2 tablespoons balsamic vinegar,
- 1 teaspoon of honey,
- a handful of fresh basil leaves and arugula,
- a pinch of red chili flakes.
Cooking process: Melt the butter and sugar in a small pan over medium heat, then add the curry nuts and cook until the nuts are crunchy and caramelized, about 5 minutes. Spread the nuts on a plate or tray lined with baking paper and cool, then chop them with a knife and set aside.
Heat a grill pan until hot. Wash the nectarines clean, remove the pits and cut each fruit into eight long pieces. Drizzle the nectarine pieces with olive oil and place on the grill, cook for about 1-2 minutes on each side, then transfer to a salad plate ready to serve.
In a small bowl, mix the olive oil, vinegar, and honey, and season with your desired seasonings.
