Bolivian pigeon salad with vegetable feta

This is a very refreshing and easy salad to make, and if you cook the cereal the night before, it goes faster. Then just chop the vegetables, mix the sauce and eat!

Ingredients (for 2 servings):

  • 90 g of Bolivian pigeon powder;

  • 1 small cucumber;

  • 1 small red onion;

  • 1 avocado;

  • a handful of spinach;

  • fresh basil and parsley;

  • a handful of tomatoes;

  • about 70 g of vegetable feta.

for the sauce:

  • 6 tablespoons of olive or avocado oil;

  • 3 tablespoons. a spoonful of lemon juice;

  • 1 tablespoon. spoon of vinegar;

  • 1 tablespoon. spoon of maple syrup;

  • a pinch of salt;

  • a pinch of pepper.

Create:

1. Pre-boil the cereal. If you bake it the same day, you have to wait until it cools down.

2. Cut the vegetables into small cubes.

3. Mix all the ingredients for the sauce.

4. Mix everything and enjoy!

Herb sauce

This time I made an herb sauce from parsley and basil. However, coriander, oregano, mint, etc. Other herbs are also great. You can use one type of herbs or mix them. That’s why the sauce comes out with different flavors.

Ingredients (180 ml sauce):

  • 4 tablespoons. spoon chopped parsley;

  • 2 tablespoons. a spoonful of chopped basil;

  • 2 cloves of garlic;

  • 100 ml of olive oil;

  • 4 tablespoons. a spoonful of lemon juice;

  • 1 tablespoon. spoon of maple syrup (or other sweetener);

  • a pinch of salt;

  • freshly ground black pepper.

Create:

1. Put everything in an electric grinder or food processor and grind to a homogeneous texture. Taste and if necessary, adjust the taste with salt, pepper, lemon juice.

2. If not using immediately, store in an airtight container in the refrigerator for up to a week.
